That brings us to another upgrade worth considering: brining the chicken.
I've been brining poultry more frequently, and this batch of Tinga benefited from the technique.
A standard brine calls for 1 cup of salt dissolved in 1 gallon of water — which scales down to roughly 1/4 cup salt per quart. Submerging two chicken breasts in that solution for half an hour makes a noticeable difference, even with simple, everyday chicken.
