A cut suited to birria or caldo needs different structure from a thin steak intended for a hot grill.
High heat favors thin, fast cuts. Moist cooking favors collagen-rich shoulder, shank, brisket, and rib cuts.
Tenderness, price, speed, leanness, and strong flavor often involve tradeoffs rather than one universally best cut.
Use the suggested phrase, then ask about thickness, trimming, bone, and whether the meat is already seasoned or marinated.
