Measure out one pound of fresh jalapenos, half a diced onion, and two peeled garlic cloves. You'll also want 1 teaspoon of dried Mexican oregano, freshly ground black pepper, a pinch of ground cumin if you like it, and a drizzle of neutral oil. For the cooking liquid, combine 3/4 cup white vinegar, 1/2 cup water, and 1/2 teaspoon salt.
Reserve 8 to 10 fresh cilantro sprigs and one lime to add at the very end in the blender. Since jalapeno sizes vary widely, the one-pound target is far more dependable than counting individual peppers—most people find that works out to roughly 10 or 11 medium-size fruit.
