Warm the ham before the eggs go in
Ham does not need a long sear, but it should hit the warm pan first so the edges lose that straight-from-the-fridge feel. A short pass in butter or oil gives it better flavor and helps it spread evenly through the eggs.
This step also prevents the eggs from overcooking while you wait for the ham to catch up. Once the ham is warmed and lightly fragrant, the pan is ready for the eggs.
